What is Patrode?
Patrode (also known as Patra or Pathrode) is a traditional dish made primarily from colocasia (taro) leaves. The leaves are coated with a spicy gram flour (besan) paste, rolled up, and steamed. Patrode is popular in various regions of India, particularly in Karnataka, Maharashtra, and Gujarat. It's known for its unique flavor, combining the earthy taste of colocasia leaves with the spicy and tangy gram flour mixture.

Steamed Patrode can be stored in the refrigerator for up to 3-4 days. Ensure they are stored in an airtight container to maintain their freshness and prevent them from drying out.
How to Fry Steamed Patrode
Frying Steamed Patrode gives it a crispy texture and enhances its flavor. Here’s how you can fry them:

- Oil for shallow frying

- Take the steamed Patrode slices out of the refrigerator and let them come to room temperature if they were stored in the fridge.

Heat the Oil:
- In a shallow frying pan, heat some oil over medium heat. You can use any oil suitable for frying, such as vegetable oil or mustard oil.

Frying:
- Once the oil is hot, carefully place the steamed Patrode slices in the pan. Avoid overcrowding the pan; fry in batches if necessary.
- Fry the slices until they turn golden brown and crispy on one side. This should take about 2-3 minutes.
- Flip the slices and fry the other side until it also becomes golden brown and crispy.

- Once fried, remove the Patrode slices from the pan and place them on a paper towel-lined plate to drain any excess oil.

- Serve the fried Patrode slices hot, garnished with freshly grated coconut and chopped coriander leaves, if desired.
